Antony says: The secret to success is to match the crouton with the soup. For extra crunchy croutons, place them in a medium hot oven on a baking tray for a couple of minutes while heating through your soup: then scatter them on just before serving so they don’t soften too soon. Pop extra ones into a bowl so people can help themselves to more crunchy cubes if they so wish – and they usually do!
