Take the chicory apart carefully and make ‘boats’ of the leaves. Put them on a plate and fill with any canapé filling of your choice. Tuna and low fat mayonnaise, crabmeat, prawns, hummus and grapes.
Combine chicory with raisins, orange and walnuts – great salad and doesn’t
need a dressing.
