Manna Café announces the successful opening of its organic restaurant-shop in Brighton. Manna is one of only a handful of restaurants in the UK serving a menu entirely comprised of raw or “living foods”.

These are all vegetarian dishes, prepared entirely with ingredients that have not undergone cooking or heating above 45°C. This has the benefit of preserving, within the food, all the life energy, enzymes, antioxidants, vitamins and minerals. Essentially, all those critical elements which the body naturally requires for complete nourishment.

Co-director Kyle Vialli comments, “Most people when they hear about raw foods immediately tend to think of boring lettuce, tomato and cucumber salads. In contrast, the vast majority of the people who come to Manna Café, even those who have never heard of living foods before, are always amazed to see the range of tantalising organic dishes that can be prepared without cooking.”

Among savoury dishes, Manna Café offers Living Pizzas with cashew nut cheese, shitake mushrooms and olives, as well as unpasteurised goats Cheese Burgers with caramelised onions and ‘gherkins’. The range of desserts is equally surprising, with puddings such as Raspberry Ripple Cheesecake, the ‘All American’ Apple Pie and several variations of Raw Chocolate Cakes. Manna also has a juice and smoothie bar and a large selection of organic teas and coffees.

Co-director Andreas Demetriou points out, “Since Manna Café opened its doors on August 18th 2008, it is quickly becoming popular among an eclectic clientele. From local builders requiring a ‘quick-fix’, to students from two nearby Universities wanting “something a bit more healthy”, to raw foodists wishing to meet over tea and cake, to spiritual adherents keen to sample some “high-vibrational” fare, we are happy to cater for a vibrant mix of requirements”.

Manna Café is more than just a live food venue with a bohemian and welcoming atmosphere. As well as offering a comprehensive range of complementary therapies on the upper floor, and a small shop front with superfoods, organic skincare and books on cutting-edge nutrition, Manna also hosts and organises regular events, enlivening nutritional presentations, and spiritual talks and workshops all year round.
