The Grant water baths have become a key feature in the redesign of our kitchens as part of the redevelopment of the Little Chef brand

CAMBRIDGE, England, October 27, 2009 - Little Chef is using Grant Instruments’ sous vide cooking baths in the kitchens of its new style restaurants created by Michelin-starred chef Heston Blumenthal.

The baths have enabled Little Chef to improve its menu offering, and to produce classic dishes - sauces, fish, poultry, main courses and desserts - with great precision and to the very highest standard time and time again.

Grant’s team has worked very closely with the iconic roadside restaurant chain’s designers and chefs to integrate its Expert range of sous vide baths into their busy kitchens. To date, the baths feature in each of the refurbished restaurants in Popham, York and Kettering.

Sous vide, a French word meaning ‘under vacuum’, is a process in which food (e.g. a cut of beef or fillet of salmon) is vacuum packed and then slowly cooked for long periods at an accurately controlled temperature. Cooking using the sous vide method helps to ‘lock in’ the flavour which greatly enhances the taste and tenderness of the food.

Sous vide cooking has revolutionised many top restaurant kitchens and is now catching on among chefs and gastronomy experts in mainstream restaurants, gastropubs, cooking schools and in contract caterers. The technique is also being used increasingly by enthusiastic home chefs following the publication of a number of sous vide cookbooks.

Grant’s sous vide baths come in two distinct ranges: the highly affordable Professional range, and the Expert range which incorporates easy-to-use key pad controls, greater temperature setting accuracy, enhanced insulation and sleek lines for easier cleaning. Both ranges feature three stainless steel models with different size capacities based on standard gastronorm tanks of five, 12 and 26 litres. Like all Grant products, the sous vide baths are built to last and come with a two year warranty.
