Grant Instruments adds versatile stirred heater to successful sous vide cooking range

CAMBRIDGE, England, April 8, 2009 – Grant Instruments (www.grant.co.uk), a world-renowned supplier of scientific, life sciences and data acquisition products, has bolstered its successful sous vide cooking range with the introduction of a versatile and cost-effective universal stirred heater that can be clamped onto virtually any vertical sided cooking vessel, (up to 50L) transforming it instantly into a sous vide cooking bath.

The Grant SV100 product offers exceptional water temperature stability (±0.02°C), and precise temperature control (ambient plus 5 to 100°C) via a simple to use dial. It also features an easy to read LED display, providing a clear view of the set temperature across the kitchen. To ensure safe operation in a busy kitchen environment, the SV100 comes as standard with a low water level automatic cut-out and a stainless steel cage for encasing the submersed elements. Like all Grant products, the SV100 is built to last and comes with a 2-year warranty.

Roy Homent, catering product manager at Grant Instruments, said: “We developed the SV100 in response to demand from chefs for a flexible and convenient stirred heater that was versatile enough to use on a variety of vessels. Cooking at exactly the right temperature for the correct amount of time is critical for achieving perfect results when cooking sous vide so the stirred heater had to provide extremely accurate temperature control.”

Sous vide, a French word meaning ‘under vacuum’, is a process in which food (e.g. a cut of beef or fillet of salmon) is vacuum packed and then slowly cooked for long periods at an accurately controlled temperature (around 70°C). Cooking using the sous vide method helps to ‘lock in’ the flavour which greatly enhances the taste and tenderness of the food.

Sous vide cooking has revolutionised many top restaurant kitchens and is now catching on among chefs and gastronomy experts in mainstream restaurants, gastropubs, cooking schools and in contract caterers. The technique is also now being used increasingly by enthusiastic home chefs following the publication of a number of sous vide cookbooks.

The sous vide baths come in two distinct ranges: the highly affordable Professional range, and the Expert range which incorporates easy-to-use key pad controls, greater temperature setting accuracy, enhanced insulation and sleek lines for easier cleaning. Both ranges feature three stainless steel models with different size capacities based on standard gastronorm tanks of 5, 12 and 26 litres.
